We love Asian food in my family, especially Hunter, but getting Chinese take-out food is not exactly the healthiest option. I have played with a few different recipes and come up with this healthier version of Mongolian Beef & Broccoli. I use a little brown sugar to sweeten it up but it is a minimal amount and can always be left out if you prefer! To make this a gluten free meal, you can substitute the soy sauce for Coconut Aminos or a Gluten-Free soy sauce. Also, not all cornstarch is made in a gluten-free factory so check the package!
On a busy mom note - cooking in a pressure cooker is such a great time saver!! One pot to clean and pretty much just throw everything in and start the timer!
